Recipe: Buffalo Chicken Dip

Buffalo Chicken Dip

When it comes to snacking and partying (or just snacking,) let’s face the truth. Everybody loves a creamy, delicious, decadent dip!

This mix-and-heat Buffalo Chicken Dip is all of that and more! Simple to make, easy to enjoy. It’s a crowd pleaser for sure!

Cook it in the oven, on the range or even in a slow cooker and you’ve got a party winner – even if you’re making it for a party of one!

This recipe is for the oven cooked variety, but the directions for the range top and slow cooker are below.

Ingredients:

3 cups (about 1 pound) chicken, cooked and shredded

1 (8 ounce) block cream cheese, cut into 1-inch cubes and allowed to soften

2 cups shredded part-skim Mozzarella cheese

1 cup plain Greek yogurt (for keto dieters, substitute sour cream)

1 cup hot sauce (I think Frank’s is still the best)

1/2 cup crumbled blue cheese

1/2 cup thinly-sliced scallions (green onions)

optional toppings: extra blue cheese, green onions, and/or hot sauce

Execution:

  1. Pre-heat your oven to 350°F.
  2. Place all of your ingredients in a large mixing bowl. Stir or gently blend all of the ingredients together until fully mixed. Spread the mixture evenly in a square baking dish. (I use a 9″ X 9″ dish)
  3. Transfer to the oven and bake for 20-25 minutes. You’ll know you’re done when the dip begins to brown around the edges and is warm all the way through.
  4. Remove from the oven and garnish with whichever toppings you desire.
  5. Serve warm with tortilla chips (believe it or not, Costco’s Kirkland brand organic tortilla chips may be the best I’ve tasted,) fresh celery and carrots or veggies of your choice.

Crockpot cooking method:

  1. Stir all the ingredients right in the bowl of a crock pot until fully mixed.
  2. Cook on low for 2 to 3 hours, ensuring the cheese is completely melted.
  3. Transfer the cooked dip to a serving bowl. Garnish with whichever toppings you desire.
  4. Serve warm with tortilla chips, fresh celery and carrots or veggies of your choice.

Range top Buffalo Chicken Dip:

  1. Stir all ingredients together in a large saucepan over medium heat. Cook for about 12-15 minutes, stirring occasionally, until the cheese is completely melted and the mixture is nearly simmering.
  2. Transfer the cooked dip to a serving bowl. Garnish with whichever toppings you desire.
  3. Serve warm with tortilla chips, fresh celery and carrots or veggies of your choice.

Ketogenic dieters will want to avoid the chips and stick with celery and other vegetables.
